Baked Oatmeal Recipe

Apple Pecan Baked Oatmeal

Inspired by this recipe from Allrecipes.com

Ingredients

  • 2 ¼ cups Light Vanilla Soy Milk
  • 2 tablespoons Packed Brown Sugar
  • 1 teaspoon Light Margarine
  • ½ teaspoon ground cinnamon
  • 2 tablespoons of Toasted Wheat Germ
  • 2 ¼ cups of Old Fashioned Oats
  • 3 small Gala Apples (chopped & peeled)
  • ½ cup raisins
  • 2 tablespoons of minced pecans
  • 2 tablespoons of reduced calorie maple syrup
  • ¼ cup dried mixed berries (cherries, cranberries & blueberries)

Directions

  1. Preheat oven to 375 degrees.
  2. In a medium saucepan gently heat milk, brown sugar, margarine, cinnamon and salt until melted.
  3. Add remaining ingredients and mix gently.
  4. Spread into a greased 9×13 glass baking dish.
  5. Bake at 375 for 40-50 minutes or until oatmeal has set.

Notes

I used the original recipe’s ½ cup of packed brown sugar and thought it was WAY too sweet with all the apples and raisins and fruit so I think you should reduce it to two tablespoons of packed brown sugar. I’m still perfecting this recipe but it was the perfect comfort food for cool fall mornings!

I cranked out 7.5 miles on the recumbent bike last night and went through some sets of leg presses and calf raises for my PT and #OctGTD challenge. I was exhausted by the time I got home.

Notes from the day

If having an injured Achilles tendon wasn’t enough, now I have cooties! I apparently got shingles. (Possibly from too much stress? They aren’t sure why though.) Which I thought only old people got, but no Miss Medical Mystery herself (me) broke out in a itchy rash and thought it was just an allergic reaction. WRONG! It’s cooties! Thankfully, I’m still allowed to work as well as workout and it’s only contagious if someone touches the actual rash and has never had chicken pox. So, it’s on my back, which most people would not come in contact with and I’m covering it in bandages and wearing two layers of cotton shirts to make sure I don’t spread it around. I’ve been sanitizing everything I touch.  Lord knows, I would not wish this on my worse enemy. Thankfully, it doesn’t seem to be painful, just itchy. And, I can’t scratch it which is enough to drive a sane person crazy.

  • Hubby for touching my cooties and putting the bandages on for me even though I know it grosses him out. haha!

congrats on the weight and be glad they aren’t painful since they usually are..Case you had chicken pox and you can get vaccinated too

Thanks, I must of worked off those two cupcakes! The doctor was surprised they weren’t painful either, I hope it’s not just a delayed reaction! LOL! I asked the doctor about the vaccination for him, and he said he didn’t need it as long as he’d had the chicken pox but I read online it’s for people 60 or older. He’s just giving me a hard time.

OH NO! My Mom had a bad case of shingles months ago and still gets twinges of pain. I hope because you are young that they go away quickly!!! NO STRESS GIRL! :)

I really couldn’t believe that was what it was!!! They are hoping the same, that since I am young it won’t be bad and I haven’t had any pain just itching. So, I shouldn’t complain! Thank you TJ!

I’m so sorry about your shingles. I got them in college. I was only 21! I think it was stress induced too. My cross country team was trying to make it to Nationals plus the stress of being a senior…student teaching=shingles. Ahh, I was so weak. I got them on my back and down my right leg. I’ll be praying for you. The meds I was given helped a lot.
